The Post Brewing Company was created out of a love for cold beer and delicious hot chicken. The founders grew up eating fried chicken from their grandmother’s cast iron skillet, and had dreams of doing a Colorado version on this memory for decades. So after many years of eating the fried chicken and traveling around the country to try other versions, their dream became reality. At Post Brewing Company in Lafayette, Chef and Owner Brett Smith began perfecting a Colorado-style fried chicken recipe. They only serve humanely raised, fresh and all natural chicken and source local farm produce whenever they can.
Their chicken is brined for hours, soaked in buttermilk and dunked in seasoned and gluten-free flour. It is cooked to down-home perfection, made just like your grandmother used to make. This took time and research to figure out what works, what equipment to use, and their results show in their chicken! The pressure fryer they use keeps the chicken nice and juice, with a crispy crust and tasting even better the next day.
