If find yourself in Pueblo on your Colorado vacation, there are a number of restaurants that should definitely be investigated.  Ranging from French cuisine to Irish pub food, the town has quite the range when it comes to internationally inspired foods.  These include high class ritzy places, like Restaurant Fifteen Twentyone, to more lively and active venues such as Shamrock Brewing Company.  With this eclectic range of food, there will be plenty of options to choose from.

If you’re looking for the best of the best in Pueblo during your Colorado vacation, then look no further than Restaurant Fifteen Twentyone.  This high class restaurant is the perfect place if you are looking to go out with your significant other or meeting with business clients.  The low key ambient lighting in concert with the soft flickering glow of candles creates an intimate and relaxing atmosphere.

Restaurant Fifteen Twentyone is known throughout Pueblo for their beautifully presented French cuisine and their comprehensive wine list.  Although they have a rotating menu, patrons can expect dishes like their Porcini Dusted Beef Shoulder Tender with Truffle-Sea Salt Pomme Frite (that’s fancy French for fries!), Haricot Vert, and Red Wine Reduction, or their Pan Seared Salmon with Sautéed Spinach, Roasted Tomatoes, Crispy Eggplant, and Roasted Tomato Coulis.

La Renaissance

If you’re staying at the Edgar Olin House during your Colorado vacation and opted for the Historic Romance Package, then you’ll be treated to a dinner at La Renaissance. Even if you’re not staying at the Edgar Olin House, La Renaissance is still worth checking out. This family-owned restaurant is housed in an old church built in 1886 and sports high ceilings and stained glass windows.

What began as a family project, the La Renaissance was transformed from a dilapidated church into a fine dining masterpiece. With wide menu options of beef, chicken, duck, fish, pork, and vegetarian dishes, La Renaissance covers the spectrum when it comes to entrees.

In addition to their wide selection of entrée choices, the restaurant offers a number of quality wines, such as the Silver Oak Cabernet Sauvignon and the Rombauer Chardonnay.

If you’ve tried all the fine dining restaurants that Pueblo has to offer or if you’re just looking to have meal somewhere with a relaxed dress code and lively atmosphere, the Shamrock Brewing Company can deliver.

With a diverse menu that draws upon traditional Irish dishes, such as their Shepherd’s Pie, and distinctly American pub food, like their Buffalo Burger, you’ll be sure to walk away stuffed.

When it comes to their adult beverage selection, Shamrock takes a global stance on the situation.  The brewing company draws from traditional German, Belgian, Irish, English, and American style beers.  The brewery also prides itself on using only the most premium ingredients from around the world by importing their malted barley, wheat, oats, and rye as well as using locally grown ingredients.

When it comes to sushi in Pueblo, Mo Mo West is the big fish in the pond. Known for their friendly atmosphere and talented sushi chef, this sushi bar delivers both quality rolls and solid prices. In a land ruled by beef dishes, Mo Mo West breaks the trend for those feeling overwhelmed by red meat.

When looking to dine, don’t expect just traditional-style sushi, but also rolls that combine Southwest flavors, like their Albuquerque roll made with salmon, jalapenos, shrimp and avocado. If you visit the Mo Mo on the right day, you may also be treated to one of the chef’s experimental rolls that has yet to make it onto the menu!
